A SIMPLE EASTER MEAL YOUR FAMILY WILL LOVE

Easter is a joyous and jubilant time for families to gather in observance of our Lord & Savior resurrection. It’s also a time to sit around the dinner table with loved ones for a delicious Easter meal.  Here is a meal perfect for all households at any Easter gathering:
ROASTED LAMB WITH ROSEMARY AND GARLIC:
     Lamb is a traditional meal on Easter, symbolizing the lamb of God!
YIELDS: 6-8  servings
Prep Time: 20 Minutes
Cook Time: 1 hour 15 minutes- 1 hour 45 minutes(depending on size);
INGREDENTS:
1( 4-5 POUND) Leg of Lamb, bone in or boneless;
4-5 Cloves of Glaric, minced;
2 Table spoons fresh Rosemary, chopped;
2 table spoons of Olive Oil
Salt and freshly ground pepper to taste;
INSTRUCTIONS:
1. SEASON THE LAMB: Rub the herb paste all over the Lamb, ensuring its evenly coated. If using bone- in leg, you can make small incisions in the meat and press some paste into the slits for deeper flavor;
2. ROAST THE LAMB: Place the Lamb on a roasting rack in a roasting pan. Add about ½ cup of water are broth to the bottom of pan to prevent drippings from burning;
3. COOKING TIME: Roast for approximately 15-20 minutes per pound for medium rare, or 25- 30 minutes per pound for well done. Use a thermometer inserted into the thickest Part of the Lamb to check for doneness;
4. REST THE LAMB: Once cooked, remove the Lamb from the oven,  tent it loosely with foil, and let rest for at least 15-20 minutes before craving. This allows the juice to redistribute, resulting in a more tender and flavorful roast.
